Literature about Knights

There is a ton of great literature out there about knighthood, and not all of it about Medieval knights. For example, I believe Edgar Rice Burroughs' 24 books about Tarzan capture the essence of what knighthood and chivalry are all about. But the greatest classic about knighthood as it existed in the Middle Ages has to be Sir Walter Scott's Ivanhoe.
